The vast majority of wines are now finished..."Finished" means that the sugar has been consumed by the yeast and transformed into alcohol... But the malolactic fermentation is also finished in the reds.So now it's time to make these wines a little clearer.The wine-maker has several possibilities to choose from:- wait for the wines to clarify by natural sedimentation, which is the longest method,- filter, which is quick but the most traumatic method for the wines,- or fine them...Fining agents are natural products, often made with egg albumin or bentonite (a sort of clay), which are incorporated into the wines, enabling the sedimentation to take place more easily while preserving as much as possible the aromas and finesse of the wines.
