Work in progress - Olives & Oils

Also called Little Siberia, and actually we are still in Provence. The estate, nested in mountains of the Haut Var region, is known for being subjected to vigorous winters.Originally planted with vines as aerial pictures from the 1950s show, the group had been bought out by a big construction company a few years ago to create an industrial dump. In front of the beauty of the site ant the environmental problems that such a project would have caused, the idea was given up and the estate was sold in 2012.The new owner had only one goal: to revive this sleeping estate. On this particular soil, made of a sandy soil on a granite base, the vines could completely develop. 10,000 seedling of Rolle vines, the varietal king of Provençale white wine settled last year, and there is no doubt that this rejuvenated soil will allow the expression of the best flavours from this variety. Syrah and Cabernet vines are in an upcoming plantation programme. Despite temperatures the can drop below -15°C the owner also wanted to plant olive trees. After a winter thermal study, only the soils that can freeze the least easily were planted with frost-resisting varieties: The Aglandau, and a local variety the Ribier. The olive trees are becoming stronger everyday, which will allow them to face the Siberian cold in the upcoming years.
