The wine consumer is impatient!He would already like to see the white and rosé wines in bottles!Wine is a sensitive product which has to live through the cold of winter to become stable....Cold temperatures induce the precipitation of tartar crystals. If this precipitation is not given time to take place in the vats, it will happen in the bottles!This will not harm the wine's organoleptic characteristics but its presentation will be much less pleasing!Wine producers often give in to the demands of their customers and bring out early bottles (sometimes even before Christmas!) as samples.But real bottling should not take place before March.Of course the process can be accelerated by subjecting the wine to intense cold however this treatment is harsh and spoils the wine.One must wait until the wine is ready, if not one's pleasure will be diminished.
