With the grapes gathered, now we can turn to the olive groves!And we ask the same questions as we do for the grapes.Are they ripe? Will we obtain a good oil production?In the same way as for the grapes, we take out our small bags and here we are again, checking once more for maturity... the results will be very different from one olive variety to another.We try to judge whether the pungency ("ardence") and the bitterness will balance in equal measure with the bouquet of aromas and not overpower it.The olive growers from the St Tropez area already started their harvest in mid-October, but those from the Haut-Var will have to wait until November.The harvest date will play an important part on the special characteristics of the oil: a greener fruitiness for the earliest harvests against a ripe fruitiness for the later harvests.The time between the harvest and pressing in the mill will also be carefully studied to allow (or not) a light fermentation in the olive thus giving a softer character to the oil and obtaining a dark fruitiness...
