A truffle reaches its finest maturity in February.Truffles are collected with the help of trained and highly motivated dogs...in general by the reward of the "caveur" (the person gathering the truffles) after each truffle discovered. This reward is often cheese or little pieces of sausage, and the dog always believes that this hunt is a real challenge that deserves just recognition!It is not uncommon to see a dog sit down after the discovery of a truffle and only to set off again once it has received its reward!When a dog has detected the presence of a truffle, he marks the territory and begins digging to unearth it.The truffle collector then has to carefully retrieve it sometimes by finishing off the digging without damaging the immediate environment of the black diamond because a rough collection could harm the roots of the host tree and seriously put at risk the harvest of the following year.
